Japanese knives are precision tools with hard, thin edges. Improper care damages them faster than any amount of use.

Cleaning

Hand wash only. Japanese knives go in the dishwasher — never. The high heat, detergent, and water pressure damage the handle, dull the edge, and can pit stainless steel.

  • Wash immediately after use — acidic foods (citrus, tomatoes, vinegar) react with carbon steel
  • Use warm water and mild dish soap
  • Wipe from the spine to the edge (never across the edge)
  • Dry immediately with a soft cloth — don’t air dry
  • For carbon steel: wipe the blade with a thin coat of mineral oil after drying

Cutting Surfaces

Wood or soft synthetic cutting boards only.

Storage

Never loose in a drawer. Japanese knives should be stored:

  • Magnetic strip — The best option. Keeps blade exposed, prevents accidental contact
  • Saya (blade guard) — Individual wooden sheath. Essential for transport
  • Knife roll — Good for multiple knives
  • Knife block (horizontal) — Acceptable if slots are individual (not universal)

Edge Maintenance

  • Regular — Strop on newspaper or leather between sharpening sessions
  • Weekly — Touch up with ceramic honing rod (avoid steel rods — too aggressive)
  • Monthly — Light #3000 stone touch-up
  • Quarterly — Full #1000 → #5000 sharpening session

Signs of Damage

  • Microchips — Tiny chips along the edge. Stop using and sharpen to remove
  • Bent tip — Usually from dropping or prying. Professional repair needed
  • Rust spots — Immediate issue for carbon steel. Remove with baking soda paste or rust eraser
