Japanese kitchen knives have earned a reputation as the finest cutting tools in the world. This guide covers everything you need to know — from steel metallurgy to daily care — whether you are buying your first Japanese knife or adding to a seasoned collection.
Why Japanese Knives?
Japanese knives differ fundamentally from Western-style knives in three ways:
- Harder steel — Japanese knives typically use steel hardened to 58–65 HRC versus 52–58 HRC for most German knives. This allows a much sharper edge that stays sharp longer.
- Thinner geometry — The blade cross-section is significantly thinner behind the edge, reducing resistance as food passes through.
- Different edge angles — Most Japanese knives are sharpened to 12–15° per side, compared to 20° for Western knives.
The trade-off is durability: harder steel is more brittle. A Japanese knife should not be used on bones, frozen food, or hard squash.
Traditional Craft Background
Japanese kitchen knives have their roots in two major traditional craft regions designated by Japan’s Ministry of Economy, Trade and Industry (METI):
Sakai forged knives (堺打刃物) — Produced in Sakai City, Osaka, with a history spanning approximately 600 years. Originally developed from gunsmithing techniques during the Edo period (1603–1867), Sakai knives are handmade through a division of labor: specialist blacksmiths forge the blades, sharpeners grind the edge, and handle craftsmen complete the assembly [1][2][3]. The craft is recognized as a Japanese Heritage cultural property by the Agency for Cultural Affairs [1].
Echizen forged knives (越前打刃物) — Produced in Echizen, Fukui Prefecture, with a history dating to the 14th century. Also designated as a traditional craft by METI [4].
Steel Types
The steel is the foundation of any Japanese knife. Most high-end Japanese knife steel comes from Hitachi Metals (now Proterial, Ltd.) in Yasugi, Shimane Prefecture, which produces the Yasuki Hagane (安来鋼) family of steels using traditional tatara iron sand smelting [5][6].
Shirogami (White Paper Steel / 白紙)
Developed by Hitachi Metals, Shirogami is almost pure carbon steel with minimal alloying elements. It takes an exceptionally sharp edge — widely considered the finest cutting feel of any kitchen knife steel — but rusts easily. The name comes from the white paper wrapper used by Hitachi to label the steel [5][6].
- Hardness: 62–64 HRC
- Edge retention: Excellent
- Corrosion resistance: Very low — must be wiped dry immediately
- Best for: Experienced users who prioritize cutting performance
Available grades: Shirogami #1 (highest carbon, hardest), Shirogami #2 (more forgiving), Shirogami #3 (toughest).
Aogami (Blue Paper Steel / 青紙)
Also by Hitachi Metals, Aogami adds chromium and tungsten to Shirogami’s formula for longer edge retention. Aogami Super (often abbreviated AS) adds vanadium for even better wear resistance. Named for the blue paper wrapper [5][6].
- Hardness: 63–66 HRC
- Edge retention: Very good to excellent
- Corrosion resistance: Still low
- Best for: Users who want maximum edge retention without moving to stainless
Ginsan (Silver 3 / 銀三)
Ginsan (also called Ginsanko or Silver #3) is a stainless steel developed by Hitachi Metals (Proterial) containing approximately 14–15% chromium. It combines the stain resistance of a full stainless steel with the ability to take a very fine edge comparable to carbon steel [7].
- Hardness: 60–62 HRC
- Edge retention: Good
- Corrosion resistance: High — effectively stainless
- Best for: Users who want Japanese geometry without the maintenance burden
VG-10 (V Gold 10)
A popular stainless steel from Takefu Specialty Steel (武生特殊鋼材) in Echizen, Fukui. VG-10 contains 1% carbon, 15% chromium, and additions of cobalt, vanadium, and molybdenum. Widely used in mid-range Japanese knives [8].

- Edge retention: Good
- Corrosion resistance: High
- Best for: All-purpose stainless performance
SG2 / R2 (SRS-15)
A powdered metallurgy stainless steel from Takefu Specialty Steel. The powder metallurgy process produces a very fine, uniform carbide structure, allowing higher hardness without brittleness. SG2 represents the current state of the art in production kitchen knife steel [8].

- Edge retention: Excellent
- Corrosion resistance: High
- Best for: Enthusiasts who want the best all-around steel
Knife Construction Methods
Honyaki (本焼き)
The entire blade is made from a single piece of high-carbon steel, traditionally hardened using a clay coating technique (tsuchidori) that produces a visible hamon (刃文) line. Honyaki knives are the most expensive because of the high failure rate during heat treatment [9].
- Price: ¥60,000–¥300,000+ (~$400–$2,000+)
- Performance: Excellent
- Durability: Low (fragile edge)
Kasumi / Awase (霞 / 合わせ)
A hard steel core (hagane / 鋼) is sandwiched between softer iron cladding (jigane / 地金). This gives the cutting performance of hard steel with the toughness of a softer outer layer. Most laminated Japanese knives at ¥15,000+ (~$100+) [9].
Monosteel (Modern)
The entire blade is a single piece of stainless or semi-stainless steel. Most mass-produced Japanese knives (Tojiro DP, MAC, Global, Misono) are monosteel.
Knife Styles
Gyuto (牛刀)
The Japanese interpretation of a Western chef’s knife. 180–300mm (most commonly 210–240mm). The most versatile Japanese knife — handles vegetables, meat, and fish. For most home cooks, a 210mm gyuto is the ideal first Japanese knife.
Santoku (三徳)
A shorter, flatter knife (165–180mm) designed for the “three virtues” the name translates to: meat, fish, and vegetables. The santoku has less curve than a gyuto, making it better for push-cutting. Best for home cooks with limited counter space.
Nakiri (菜切り)
A rectangular vegetable knife (165–180mm) with a flat edge and a straight, square tip. Excels at push-cutting vegetables. The flat profile leaves no uncut “belly.”
Bunka (文化)
Similar to a nakiri but with a k-tip (reverse tanto point), 165–180mm. The tip allows detail work that a nakiri cannot do.
Deba (出刃)
A heavy, thick-spined knife (150–210mm) for fish butchery. Designed to cut through fish bones. Single-bevel. Not recommended as a general-purpose knife.
Yanagiba (柳刃) / Sujihiki (筋引)
Long, narrow slicing knives (240–300mm). Yanagiba is single-bevel (for sashimi); sujihiki is double-bevel (for cooked meats).
Petty / Ko-bocho (ペティ / 小包丁)
A small utility knife (120–150mm). The Japanese equivalent of a paring knife.

- MAC MTH-80 (AUS-8) — A favorite in professional kitchens.

Mid: ¥15,000–¥45,000 (~$100–$300)
- Takamura SG2 — Exceptionally thin behind the edge.
- Shiro Kamo (Aogami Super) — Hand-forged in Echizen.
- Masakage Yuki (Shirogami #2) — Consistent quality from Yoshimi Kato.
- Yoshihiro — Reliable maker, various steels.
Premium: ¥45,000–¥90,000 (~$300–$600)
- Kurosaki Senko (SG2) — Distinctive hammered finish.
- Anryu (Aogami Super) — Excellent heat treatment.
- Tanaka (Ginsan) — Hand-forged by Shigeki Tanaka.
Heirloom: ¥90,000+ (~$600+)
- Konosuke Fujiyama — Legendary grind.
- Jiro (White #2) — Exceptional geometry, very limited availability.
- Kagekiyo (Ginsan or White #1) — Stunning fit and finish.
Essential Care
Sharpening
Japanese knives require whetstone sharpening. Pull-through sharpeners damage the thin edge geometry.
- Grit progression for maintenance: 1,000 → 3,000 → 6,000
- Grit progression for repairs: 320 → 1,000 → 3,000 → 6,000
- Recommended starter: Shapton Pro 1,000 + 5,000 (splash-and-go, no soaking needed)
Cleaning
- Hand wash only — never dishwasher.
- Dry immediately after washing, especially carbon steel.
Storage
- Magnet strip or knife guard (saya / 鞘) — never loose in a drawer.
- Avoid bamboo cutting boards. Soft wood (hinoki / 檜) is traditional and preferred.
